Chicken Lettuce Cups

*Coconut is technically a tree nut, but is more often than not excluded from the elimination diet "nut" guidelines, because most people who suffer from a nut allergy are not also allergic to coconut. It is sort of in it's own class. Check with your allergist or doctor just to be sure.

This is a literal 10 minute lunch that requires minimal ingredients and is satisfying and healthy. Coconut aminos give this flavor so, if you're not able to eat coconut*, I'd skip this one unless you have some other salty compliant sauce-y situation you can swap the aminos for. Plain ground chicken isn't that awesome. Add any crunchy veg to this dish, and top with chives/green onion/hot sauce for more flavor.

Ingredients
-ground chicken
-olive oil or oil of choice
-shallot or white onion, chopped
-salt, pepper, garlic powder
-coconut aminos
-crunchy lettuce leaves with a decent amount of structure (little gem, romaine)
-handful of crunchy veg (pictured here with snap peas), chopped
-lime for squeezing
-optional hot sauce

Recipe
-heat olive oil in a pan on medium high
-add ground chicken, salt, pepper, and garlic powder, and cook until chicken is cooked through and no longer pink
-add in a few dashes of coconut aminos and turn off the heat

-stir in chopped veg of choice
-fill your washed lettuce cups with chicken mixture
-top with a few more splashes of coconut aminos, a squeeze of lime, and optional hot sauce
