Salmon Bowl with Ginger Rice

The beauty of this bowl is that you can truly throw in whatever crunchy vegetables you'd like to throw in - all or none of the listed options below. I love this bowl with mango for some sweetness, avocado for creaminess, and the "lazy marinated cucumbers" for crunch and spice. Everything else is kind of just extra. You could pare this recipe down to salmon baked with salt and pepper, regular white rice, and a few toppings and it would do the job.

Ingredients

For the Salmon:
-salmon filets (fresh or frozen, thawed)
-salt and pepper
-coconut aminos
-sesame seeds (optional)

For the Ginger Rice:
-2-3 cups leftover cooked white rice (jasmine, basmati)
-1-2 large knobs of ginger, grated
-a few garlic cloves, grated
-1 small knob of fresh turmeric, or 1/2 teaspoon turmeric powder (optional)
-generous glugs of olive oil
-salt, pepper

Toppings:
-sliced mango
-sliced avocado with sesame seeds

-crunchy snap peas
-lightly sautéed bok choy
-sliced radishes
-sliced carrots
-lazy marinated cucumbers (sliced cucumbers tossed in chili crisp)
-arugula
-microgreens

Recipe
-preheat oven to 400
-in a large bowl, combine leftover white rice with finely grated ginger, garlic, and turmeric (i use a microplane) season with salt and pepper, and toss with several glugs of olive oil.

-spread the rice onto a baking sheet and drizzle one last time with olive oil. pop it in the oven
-while the rice is baking and crisping up (around 20 minutes), prep your salmon. season with salt and pepper and place on a baking dish. drizzle some coconut aminos over each slice of salmon, and top with sesame seeds
-put the salmon on a rack below the rice to bake for the final 15 minutes (total cook time for rice=35 min, total for salmon=15 minutes). if your rice is not crispy by the time your salmon is cooked, keep it in the oven and keep an eye on it until it is nicely golden.
-while everything is in the oven, slice up your toppings and "marinate" your lazy cucumbers in chili crisp


Crispy ginger rice is what makes this salmon bowl really special. I call for leftover rice, but if you are intent on making this and don't have any rice leftover, freshly cooked rice is fine as well (just be careful handling). This is a great option for hosting when you are on the allergen elimination diet - serve your guests salmon and ginger rice, maybe some arugula, and put all your toppings sliced on a cutting board with a few sets of chopsticks so people can serve themselves.
